How to make Punjabi chicken pulao

Today we are going to make a very special dish in our kitchen. It is going to be a very nice and tasty dish. You will be very surprised by the taste of our new recipe. The name of our new dish is Punjabi chicken pulao. Every person likes rice whether boiled, cooked, or half-cooked. So, I am so happy also because my favorite food is also the one which includes rice.

Important tip

Today I am going to tell you an amazing secret about rice. Rice after cooking gets broken and sometimes, they become touchy. That’s why by using Falak basmati rice because you will not get this problem again. So we will discuss another trick that is going to help us today and in our life whenever we will cook rice again. You first need to wash your rice very well to remove starch from the rice. We need to wash rice until they become the clear and white color of water while washing rice disappear. This is the reason why our rice breaks. You can soak rice after washing the rice. You can soak for thirty to forty minutes. But I am going to give you the best trick which is to soak rice for a greater time .this will help us while cooking because the rice will take less time for cooking when we soak them for a large time.

To make Punjabi chicken pulao we need to make yakhni first.

Ingredients

The ingredients that we need for making yakhni are

  • Chicken ½ kg (you can take beef or mutton)
  • Tej pata 1
  • Cloves 10
  • Green Cardamom 4
  • Black Cardamom 2
  • Star anise 1
  • Cinnamon 2
  • Cumin 1 tbsp.
  • Black pepper 15
  • Coriander seeds 1 tbsp.
  • Fennel seeds 1 tbsp.
  • Garlic clove 5
  • Ginger 2 inch
  • Small size Onion and cut it into two pieces
  • Salt 1 tsp
  • Water 4 Glass

Recipe

First, we will take a pan and then we will put it on fire. Then we will put the chicken into the pan. Next, we will start to add the following ingredients in the sequence given: garlic, ginger, and onion. Then we will add coriander seeds and then add fennel seeds to the pan. Then we will add all masalas i.e., tej pata, Cloves, Green Cardamom, Black Cardamom, Star anise, Cinnamon, Cumin, and Black pepper into the pan then we will add 1 tsp of salt into the pan. And then, at last, we will add four glasses of water into the pan .put the lid on the pan then we will leave this for about fifteen minutes on medium flame. After fifteen minutes our yakhni will be prepared. Now after fifteen minutes our yakhni is ready and our home has a nice scent of yakhni today. Now we will let yakhni for cooling and then after a few minutes, it will get cool. Our yakhni has been cooled. Now we will take out chicken from yakhni and we will take out all the big pieces from yakhni let's say we will filter it so that we will be left with only fluid.

Now for pulao, we have prepared everything so let’s make pulao now.

Ingredients

Yakhni water

The chicken that was taken out from yakhni

Gram masala powder ½ tsp

Tomatoes 2

Green chili 3

Garlic ginger paste 1 tbsp.

Salt 1 tsp

Red chili powder 1 tbsp.

Oil ½ cup

Onion 1 chopped

Recipe

Our rice had been soaked in water. One thing I want to say about rice is that Falak basmati rice 1 cup becomes equal to 5 cups when cooked because of their lengths. Now let’s cook our pulao. First of all, we will take a pan and then we will put it on fire. We will add oil to the pan and wait until the oil gets heated. After heating oil, we will add onions in oil and will fry the onion until they become golden brown in color. This is an original pulao that the people of Punjab cook and love to eat. Few people add yellow color to it and give it the name Biryani. Now our onion gets a color of golden brown so now we will add chicken to the pan and then we will add water in the pan to cook our chicken well. Next, we will add Ginger garlic paste we will add a small amount of water to the plate where we kept ginger garlic paste so that the paste left on the plate will also get into use.

The color of pulao depends on the color of the onion. So you don’t need to cook onion too much and also don’t cook it too little. The onion should be cooked medium. Now we will add tomatoes to the pan .you can also put yogurt in pulao if you like putting yogurt. Here I am not putting it because it is not available in my kitchen. After adding tomatoes we will add red chili powder and salt into the pan and after putting them we will add only two green Chilies in pulao in a specific manner. We will cut green chili from the center along length we will just add one cut on them and then we will add them into the pan. This will spread the good scent of green chili in the whole dish. We will only do this to two chilies because we don’t need the third chili cooked. Now we will add 1 cup of water into the pan we will cover the pan and will cook it for three to four minutes on medium flame. Meanwhile, we will strain the soaked rice. Now our masala has been cooked. We will add yakhni into the pan and will add rice to the pan and mix all things well we will cover the pan and will leave it on high flame until the water of the pan gets dried. After the water gets dried we will add gram masala on the rice and will do the same to the third chili i.e. marking cut we will then put the lid on the pan and will put some heavy bowl full of water on the pan so that the rice gets cooked for fifteen to twenty minutes. Now our pulao has been cooked. Let’s open the lid. We will mix it well. Then we will dish out our pulao. So our tasty pulao is ready. I will share its picture with you guys.
